Terre Blanche's team is proud of David Bisque, Maître d’hôtel at the gastronomic restaurant Faventia, who has just qualified for the national “Meilleurs Ouvriers de France” final, in the “Maître d’hôtel” category !
41 candidates attended the assessment sessions on Tuesday November 4th at the lycée Rene Auffray in Clichy. There were a written part and three professional catering workshops.
The first workshop was to cut a roasted Bresse poultry into five portions and serve it for two persons, with vegetables and gravy. The second focused on sell and argument skills around a menu, with jury members playing the guests’ role. Finally, the last workshop assesses the knowledge of products: guessing the wine and pairing it with one or several samples of cheeses.
10 candidates have qualified for the final that will be held in Paris in February 2015. This is a first step and we now support David Bisque in its preparation for the national final
